The legendary Los Chamizal vineyard spans the mountainside in the southern end of Sonoma Valley, slightly North the town of Sonoma. These sustainably farmed vineyards employ permanent cover crops in addition to organic compost and fertilizer to provide nutrients to the soil while prohibiting the use of insecticides. Cool breezes from the San Francisco Bay come up through the Carneros AVA to the south, providing a cooling nighttime influence for the vineyard. Chamizal is a Spanish word that translates to “a thicket of hardwood,” accurately describes the rolling hillside vineyard. The grapes were hand-harvested and carted down the hill to the winery for crush and an extended cold soak before a temperature-controlled fermentation with the wild yeast. After fermentation, the wine went into French oak barrels for the next 14 months before being bottles unfiltered.
